Best End of Summer/Beach Day Recipes

With summer coming to an end, you may be taking the last few beach trips or enjoying backyard cookouts with family. Although fall is my favorite time of year (pretty leaves, soups, and cozy weather), there’s nothing like a refreshing summer snack on a hot day! 

Whether you’re headed to the beach or having a cookout, I have provided a list of the best summer recipes that are easy to make and will leave your family (and you) satisfied!

Sandwich on a Stick (kebabs): 

Instead of having to make full sandwiches that end up getting soggy, we’re taking a spin on the classic kebab and turning them into a sandwich on a stick! This is a great way to have all of your sandwich ingredients but it’s easier to eat and kids will love them! 

Ingredients:

All you really need for this recipe is your favorite sandwich fillings, diced or cubed, and put on a stick. For example:

  • Bread of choice (white, wheat, ciabatta) 
  • Cherry tomatoes, halved 
  • Cheese of choice, cubed 
  • Baby pickles, sliced 
  • Lunch meat or leftover meat, sliced into desired portions
  • Lettuce, pieces or chopped 
  • You can also add sauces on the side like mustard or Italian dressing 

After cutting all of your sandwich supplies, simply stack them on a kebab skewer however you’d like! For a more in-depth recipe, click here

Chocolate Granola Pretzel Sticks: 

This classic but delicious treat is perfect to throw in your bag for the beach or munch by the fire pit - and they’re even easier to make! 

Ingredients:

  • 1 pack of chocolate morsels (dark, milk, whatever you’d like)
  • Pack of pretzel sticks
  • Granola (you can also substitute for cereal or nuts) 

To begin, all you need to do is melt your chocolate in the microwave - make sure to stir thoroughly. Once the chocolate is melted you can then dip your pretzels and gently roll them in the granola while the chocolate is still wet. Place on parchment paper to cool in the fridge!

Peanut Butter Pitas: 

Instead of making a simple peanut butter sandwich, let’s spice it up a bit and try a peanut butter pita! These are also a fun way for kids to add in whatever they’d like! 

Ingredients: 

  • Peanut butter 
  • Spices: nutmeg, cinnamon, and allspice 
  • 2 pita pockets halved 
  • Fruit of your choice (i.e. bananas or apples) 

First, mix your peanut butter and spices in a bowl to a smooth blend. Then, simply spread the peanut butter mixture inside your pita pocket. After that, add in your fruits and enjoy! I’d personally add in bananas and chocolate chips with maybe a drizzle of honey if we’re getting fancy. Yum!

Funfetti Dip: 

This one is for the sweet tooth lovers! Except it can be healthier than you think. This funfetti dip is perfect for the whole family and kids will love picking out which cracker to dip with! Your kids can also join in on the cooking fun with their own doll + baking set here

Ingredients:

  • 1 box of funfetti cake mix 
  • 8oz container of cool whip (can use fat free) 
  • 1 cup of plain greek yogurt (can use nonfat) 

Once you have your ingredients, all you have to do is combine the cake mix, whipped cream, and yogurt in a bowl until thoroughly mixed. Add rainbow sprinkles on top and store in the fridge or cold space until you’re ready to serve! We suggest teddy graham crackers or animal crackers to dip with! Enjoy!
